Crafted from the tender parts of the Alentejano Black Pig’s head, Cabeça de Xara — also known as Head Cheese — is one of the most traditional and emblematic specialties of our Alentejo. Its preparation is slow and meticulous: the pig’s head is seasoned, gently boiled, deboned, and finally pressed, creating a compact and beautifully marbled slice. As we like to say, this is a delicacy that true enthusiasts will simply adore! Our Cabeça de Xara proudly holds two awards: Silver Medal in 2024 and Bronze Medal in 2025 at the National Contest of Traditional Portuguese Sausages, part of the National Agriculture Fair.
